We've been waiting on the news regarding what the heck the owner of hot Lindale Park bar Monkey's Tail was going to do with the old Petrol Station spot in Garden Oaks. Now the monkey's out of the ... no, that ain't it ...

Anyway, Monkey's Tail Owner Jessie Gonzales announced a couple of things this week. First is the formation of Barrel of Monkeys Hospitality, which will serve as the group operating Monkey's Tail and other concepts. Steven Ripley is director of operations of Barrel of Monkeys, and Lainey Collum, whose past includes The Hay Merchant, Prohibition, and Yauatcha, has been installed as beverage director.

More news: Barrel of Monkeys's next concept will, in fact, be Grease Monkey at the former Petrol Station (985 Wakefield Dr.). That will open this fall. 

Grease Monkey will feature tacos with fresh tortillas and a beverage program heavy on the agave (tequila, mezcal). Plus there'll be craft beer, non-alcoholic options, and an emphasis on natural wine under $60 per bottle. Plus, all food and beverage will be available to-go via both walk-up and curbside service. 

"We have all homed in on specific areas of this business, collectively regrouped, and feel very confident with this direction," said Gonzales, in a press release. "Right now, we're committed to producing great quality cocktails and delicious food at Monkey's Tail and preparing to make a big splash with Grease Monkey this year."

Speaking of Monkey's Tail, it has a completely new cocktail menu, though beverages are still very much based on aspects of H-Town culture. Cocktails include frozens like a dragonfruit margarita, and originals like the rum-based Chaturanga and El Sabio, which is inspired by a refresqueria.

Gonzales, who is promising even more concepts beyond Grease Monkey, opened the popular Monkey's Tail two years ago with industry veterans Greg Perez and Sharif Al-Amin. Perez and Al-Amin have since split from Gonzales, with the former starting his own group Night Moves Hospitality with Lyle Bento (Space Cowboy).
